Thanksgiving Wish

Whether you celebrate the holiday with the traditional turkey feast, create your own custom or treat it as just another day, I wish you a Happy Thanksgiving. I hope your heart is filled with contentment, love and peace. May your mind be occupied with thoughts of the good things in your life, while remembering those less fortunate. I pray that your loved ones will be gathered near, if not in person then at least in spirit. 
 
As I reflect on my own blessings, I find myself to have an abundance of things to be thankful for. I have been gifted with two careers that I love. The ability to tell as story others find entertaining, and the strength to care for children in poor health. These careers have provided a safe, comfortable home, food and clothing. I have been graced with a loving family who sticks together, even when we disagree. I am lucky enough to have many wonderful friends who fill my life with laughter and joy. I’ve also been fortunate enough to experience hard times, which have afforded me a true appreciation of those times when everything is coming up roses.

These are just some of the bountiful blessings in my life. My greatest desire is that my words will inspire you to stop and appreciate the riches of your own life that tend to be forgotten in the everyday hectic rush. 

For my family's feast, I am making my Southern Bourbon Sweet Potatoes, which is a traditional part of our Turkey Day meal. I've posted the recipe below for those interested.

Happy Thanksgiving! 

Southern Sweet Potato Casserole

Ingredients:

24 oz. Simply Potatoes mashed sweet potatoes

1/2 cup firmly packed brown sugar

1/2 cup butter, melted

1/3 cup orange juice

1/2 cup bourbon

1/2 tsp. salt

1/2 tsp. pumpkin pie spice

1/3 cup chopped pecans

1 cup miniature marshmallows

Preparation:

Combine sweet potatoes sugar, butter, orange juice, bourbon, salt and pumpkin pie spice.

Spoon into a lightly greased 1 ½ quart baking dish. Sprinkle pecans around the edge.

Bake at 350 for 30 minutes or until thoroughly heated.

Sprinkle marshmallows on top and bake for 5 additional minutes or until the marshmallows are golden brown.

Serves 8 to 10
